2022 Happy Canyon Cabernet Sauvignon
Ripe blackcurrant, plum, and dark cherry lead the nose, layered with hints of cedar, dried herbs, and a touch of tobacco. On the palate, the wine is medium- to full-bodied with polished tannins, balanced acidity, and a subtle mineral note that carries through to a long, elegant finish.
Winemaking
This wine started out with a seven-day cold soak followed by a fourteen-day fermentation. The wine was aged in French oak (25% new) for 24 months. The wine was racked each spring to help develop and lengthen the youthful tannins.
