This wine underwent a seven-day cold soak followed by BM-45 yeast inoculation (one of my favorites). There were three weeks of skin contact before pressing into beautiful one-year-old Ermitage barrels, where it aged gracefully for 12 months. Prior to bottling we hand selected the barrels that would go into this blend.
